Nectarine Crisp

Nectarine and Blueberry Crisp

  • 1 cup all-purpose flour

  • 3/4 cup old fashioned oats

  • 1/2 cup brown sugar

  • 1 teaspoon cinnamon

  • pinch of salt

  • 1/2 cup butter (or use margarine, solid coconut oil, vegetable shortening or a combination of these)

  • 3 large ripe nectarines or peaches

  • 4 cups fresh blueberries

  • 1/3 cup sugar

  • 2 tablespoons lemon juice

  • 2 tablespoons all-purpose flour

Preheat the oven to 375 degrees. Combine the 1 cup flour, oats, brown sugar, cinnamon and salt in a bowl. Cut the butter into chunks and work into the dry ingredients until the mixture is crumbly. Set aside. Cut the nectarines into chunks and place them in a bowl. Add the blueberries, sugar, lemon juice and flour and toss ingredients. Spoon into a baking dish. Top with the crumb mixture. Bake for about 45 minutes or until the top is golden brown.

Makes 8 servings

It’s getting to be that time of year in Connecticut — when the produce is at its summer peak and you know there’s only about a month to eat it up and use it up before the Jewish holidays come and we focus more on festive dinners and heartier food.

The nectarines couldn’t be better than they are right now — so here’s a treat that’s perfect for now. But here’s the thing — you can freeze this and reheat for a holiday dinner. The recipe can be either dairy or dairy-free.

Gluten-Free Peach Crisp

Some summers the peaches are glorious.

And then there’s this year. I haven’t had an excellent peach or nectarine yet.

I bought a bunch a few times and they tasted ok, but not really flavorful. Some were cottony and mealy.

I used the cottony/mealy ones to make sauce — like applesauce only made with peaches (with a bit of cinnamon and a squirt of lemon juice). It was very good. We ate some and I used the rest for quickbread.

I used the sort-of-tasty ones for this peach crisp. This was perfect. Baking — plus some other stuff — brought out the best of the fruit.

And look how easy this dessert is!

Plus, it’s gluten-free, in case you need…

Gluten-Free Peach Crisp

Filling:

  • 6 ripe medium peaches

  • 2 tablespoons sugar

  • 2 tablespoons minute tapioca

  • 1 tablespoon lemon juice

Crust:

  • 1-1/2 cups quick cooking oats

  • 2/3 cup brown sugar

  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon salt

  • 6 tablespoons butter (margarine or solid coconut oil), cut into chunks

To make the filling: Lightly butter a baking dish. Preheat the oven to 400 degrees. Slice the peaches and place the pieces in the baking dish. Add the sugar, tapioca and lemon juice, toss the ingredients and let rest for 15-20 minutes. 

To make the crust: Mix the oats, brown sugar, cinnamon and salt in a bowl. Add the butter and work it into the dry ingredients until the mixture is crumbly. Place on top of the fruit. Bake for 30-35 minutes or until the crust is golden brown.

Peach Crisp

Autumn may be here, officially speaking. But I couldn't resist the gorgeous nectarines at a local market. I bought a dozen. Large. 

I let them ripen for two days on my counter and they had that end-of-summer ripe, sweet perfume. I couldn't wait to polish one off, anticipating the juicy flesh on my tongue, savoring the last essences of summer.

They were mealy. Dry. Huge disappointment.

But I hate to throw food out.

Ed wanted me to poach them. It seemed like a good idea because poaching not-so-good fruit can enhance their flavor.

They were so big that before poaching I decided to cut them in half, remove the pits and poach the halves. But when I cut them they were full of brown spots. Beyond poaching.

So I cut around the brown spots and from 12 large nectarines had enough flesh to make a crisp for 6 people. 

Now, that was not at all disappointing. In fact it was just perfect. I added just a bit of honey and enough lemon juice to bring out the best of what was left of these nectarines.

Here's the recipe, for when you have not-so-good peaches or nectarines (you could make this crisp with pears too), and I bet it would be especially delicious if your fruit started out wonderful too.

Peach/Nectarine Crisp with Oat Crust

Crust:

  • 3/4 cup old fashioned rolled oats
  • 1/3 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 4 tablespoons cold, unsalted butter (or substitute)

Filling:

  • 6 large peaches or nectarines
  • 2 tablespoons all-purpose flour
  • 2 tablespoons honey
  • 1 tablespoon lemon juice

 

Preheat the oven to 375 degrees. In a bowl combine the oats, flour, brown sugar, cinnamon and salt. Add the butter and work it into the dry ingredients until the mixture is crumbly. Set aside. Peel the peaches and discard the pits. Slice the peaches into a bowl. Add the flour, honey and lemon juice and toss the ingredients. Place the mixture in the baking dish. Scatter the oat mixture on top of the fruit. Bake for 35-40 minutes or until the crust is golden brown.

Makes 6 servings

The best peach I ever ate was in Italy, somewhere right off the Amalfi Drive on a trip I made with my mother. Maybe that peach tasted so good because it was our first trip to Europe and everything seemed special and magical — the sights, the hotels, the food. Everything. We took a tour bus on that particular day. It was summer and it was hot and the driver stopped in a little village where there were vendors selling fresh fruit just picked off the local trees.

We each bought a peach. A gigantic, ripe peach with a rosy glow and a fragrance vivid enough to attract bees as well as tourists.

Those peaches were so juicy that with each bite the sweet, pink liquid trickled down our forearms like the way it always does when a kid eats ice cream too slowly in the heat.

I’ve never tasted a more perfect peach. But I’m always looking for one and every year I buy hundreds during the summer in the hope of biting into peach paradise once again.

I must say, this year’s peaches have been exceptional.

No, not exactly like that one in Italy so many years ago. But maybe that’s just the power of memory.

I’ve already eaten several peaches this season, but I bought so many recently that I used the leftovers for this crisp, which I made for a Tea our local Hadassah group holds for cancer patients and their caregivers every other week.

filling:

6 ripe medium peaches

6 tablespoons sugar

2 tablespoons all-purpose flour

1 tablespoon lemon juice

1/2 teaspoon cinnamon

crust:

2/3 cup brown sugar

3/4 cup quick cooking oats

3/4 cup all-purpose flour

5 tablespoons butter

Lightly butter a baking dish. Preheat the oven to 400 degrees. Bring a large pot of water to a boil, add the peaches and cook for 10 seconds. Drain under cold water. Peel the peaches and discard the pits. Slice the peaches into a bowl. Add the sugar, flour, lemon juice and cinnamon, toss the ingredients and place the mixture in the baking dish. In a bowl combine the brown sugar, oats and flour. Add the butter and work it into the dry ingredients until the mixture is crumbly. Place on top of the fruit. Bake for 30 minutes or until the crust is golden brown. Makes 6 servings
