Carrot Bread with Raisins for Rosh Hashanah

Somehow Labor Day is over and the food thoughts in my head go straight from tomato salad and grilled chicken to pumpkin soup and baked apples

Of course there's still time to enjoy the last of the summer fruits and vegetables, still time for outdoor-cooked grilled, marinated steak

But I'm thinking forward. It's almost a new season and -- yikes! -- the High Holiday season is only two weeks away.

Which leads toady's food thoughts to: carrots, because carrots are traditional during Rosh Hashanah. I usually cook them in soup -- one version or another. But last year I decided to experiment with a few recipes for carrot quick bread.

This is the one we like best. It's moist and sweet, so it can be dessert, and because it is parve, it is a good choice after a traditional holiday meat meal.

But also makes a good snack either by itself or smeared with cream cheese (softened is best and maybe even mixed with some lemon juice).

CARROT BREAD(P)

  • 1-1/2 cups all-purpose flour
  • 2-1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup brown sugar
  • 1/3 cup white sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 tablespoon lemon juice
  • 1-1/2 teaspoons grated lemon peel
  • 1-1/2 cups grated carrots
  • 1/2 cup golden raisins

Preheat the oven to 350 degrees. Grease an 8-1/2”x4-1/2” loaf pan. Mix the flour, baking powder, salt, cinnamon and nutmeg into a bowl. Set aside. Beat the brown sugar, white sugar and vegetable oil in the bowl of an electric mixer set at medium speed for 2-3 minutes, or until well blended. Add the eggs, one at a time, beating after each addition. Stir in the lemon juice and peel. Add the dry ingredients and blend them into the egg mixture. Fold in the carrots and raisins. Pour the batter into the loaf pan. Bake for about 50 minutes or until a cake tester inserted into the center comes out clean. Let cool in the pan for 10 minutes, then invert onto a rack to cool completely.

Banana Bread with Dates and Figs

Every Purim I try new hamantaschen from different bakeries. I've also made my own hamantaschen using a variety of recipes.

But so far, after years and years of buying this one and that one, my favorites are the (parve) ones I get at The Bakery, in Plainview, NY. For me, they are the enduring treats of childhood, never failing to please, never changing, even in a world where innovation is honored.

And so -- I will buy my hamantaschen this year. Old fashioned flavors: prune and apricot. At The Bakery.

Which means that for Purim, instead of creating a completely new hamantaschen recipe or even trying a new pastry recipe with old fashioned filling, I am going to bake banana bread as mishloach manot gifts.

I have a zillion recipes for banana bread. Some with streusel. Some dairy-free. Some loaded with chocolate chips, some with coconut. Some all chocolate-y. Some spicy. And on and on.

This is my most recent banana bread recipe, one I came up with while revising my mother's date-nut bread recipe. 

 

Banana Bread with Figs, Dates and Nuts

  • 2-1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 cup vegetable shortening
  • 1-1/2 cups sugar
  • 4 large very ripe bananas, mashed
  • 4 large eggs
  • 1 cup chopped dried figs
  • 1/2 cup chopped dried dates
  • 1/2 cup chopped toasted almonds

Preheat the oven to 350 degrees. Grease and flour a 10-cup bundt pan. Mix the flour, salt, cinnamon and baking soda together in a bowl. In the bowl of an electric mixer set at medium speed, beat the shortening and sugar until well blended. Add the bananas and beat them in thoroughly. Add the eggs and beat them in thoroughly. Add the flour mixture and beat for a minute or so until the batter is well blended. Fold in the figs, dates and nuts. Pour the batter into the prepared pan and bake for about one hour or until a cake tester inserted into the center comes out clean. Remove from the oven and let cool in the pan for 15 minutes. Remove to a cake rack to cool completely.

Makes one bread, serving 16-18

 

Mom's Date-Nut Bread

Tu B'Shevat is one of the lesser known Jewish holidays, but also one of the more delicious ones. From my childhood I remember it as a time when my mom would buy dried figs that came in a wreath of sorts, the figs tied together with string.

I ate dozens of them.

It was also when she made her fabulous Date-Nut Bread. She served the slices like a sandwich, with cream cheese slathered between the layers. 

I ate dozens of those too.

My cousin reminded me that her mother and mine baked Date-Nut bread in a coffee can. Yes, of course! Because our mothers were married young women during WWII, when metal -- and therefore loaf pans and other assorted baking equipment -- was in short supply. So they kept the cans from ground coffee and other foods such as fruit cocktail and used those instead.

I recently made a batch of date-nut bread using my mom's recipe. I used a loaf pan and was a little disappointed. Not in the pan. In the bread. It seemed dry. Maybe I over baked it. Not sure, but I always loved this recipe, so I tried again but made a few changes.

I used less flour.

I also thought it might be a good idea to include some figs (or, frankly, any other dried fruit) with the dates and I also thought the flavor would perk up a bit with a small amount of fresh orange peel. 

My mother added Madeira or sherry, but because I had a lovely sample of Cherry Heering that I got at Kosherfest, I used that instead. She also mixed in walnuts but because of allergies, I replaced them with toasted almonds.

Of course, the bread was completely different with all these changes.

I loved it.

Especially when sliced and slathered with cream cheese.

 

Mom’s Date-Nut Bread New Version

  • 1-3/4 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup chopped dates
  • 1 cup chopped dried figs, apricots, cranberries, cherries, prunes or raisins
  • 1 cup chopped toasted almonds
  • 2 teaspoons grated fresh orange peel
  • 2 tablespoons vegetable oil
  • 2 tablespoons Orange brandy, cherry Heering, Madeira, Port or Sherry wine
  • 1 large egg
  • 1 cup boiling water
  • cream cheese, optional

Preheat the oven to 350 degrees. Grease a 8”x4-1/2”x3” loaf pan (or a one-pound coffee can). Mix the flour, sugar, baking soda and salt into a bowl. Add the fruits and nuts and toss the ingredients to coat the fruit with the flour mixture. In another bowl, combine the vegetable oil, wine and egg. Pour the boiling water into the fruit-flour mixture and mix thoroughly. Add the egg mixture and blend it in thoroughly. Spoon the batter into the prepared loaf pan. Bake for about 50 minutes or until a cake tester inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes. Invert onto a cake rack to cool completely. Slice and serve plain or with cream cheese.

Plums - as Crisp, not Torte

A few weeks ago I spotted Italian prune plums at Fairway. It was 96 degrees out, in the middle of a heat wave, and here I was looking at the first culinary signs of autumn.

But there they were, the plums, and of course I bought several pounds of them.

My thoughts went immediately to Plum Torte, the iconic Rosh Hashanah dessert. I make one every year.

But those plums are too good to reserve for just one holiday.

So I made these Italian Prune Plum Crisps.

Crisps are a more homey-style dessert than a stately looking Plum Torte. However, I think they are just perfect for the holidays. Easier too.

Or, why not serve both?

 

Plum Crisp with Oat Streusel

Filling:

  • 36 Italian prune plums
  • 1/3 cup brown sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour

Crust:

  • 1/2 cup all-purpose flour
  • 1/2 cup quick cooking or rolled oats
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon grated nutmeg
  • 1/4 teaspoon salt
  • 5 tablespoons unsalted butter or margarine, cut into chunks

Preheat the oven to 350 degrees. Combine the plums, brown sugar, lemon juice and flour in a baking dish. Set aside. Place the flour, oats, brown sugar, cinnamon, nutmeg and salt in a bowl and mix ingredients to distribute them evenly. Add the butter and work it into the dry ingredients with fingertips or a pastry blender until the mixture looks like coarse meal. Place the oat mixture over the fruit. Bake for 30 minutes or until the crust is crispy and brown.

Makes 6-8 servings.

 

 

 

Aunt Kate's Cheese Cake

My Mom always talked about what a good cook Aunt Kate was. She'd say "Kate could make franks and beans taste like a gourmet dinner."

Truth is, Aunt Kate (Kate Winter) was actually not my biological or married-in aunt; she was our neighbor when I was a little girl in Bridgeport, CT. In those days it was the custom to call your parents' good friends aunt/uncle, out of respect. My parents and the Winters remained close friends, even after my parents moved away.

Recently, while going through a purge of my recipe files, I came across Aunt Kate's recipe for cream cheese cake. It was on an index card, in her handwriting, complete with instructions, including the reminder to place the finished, cooled cake "in the ice box."

Naturally, I had to try it.

My Mom was right. This was one fabulous recipe. Creamy, rich cheesecake -- but lighter and fluffier than most. It doesn't need anything but itself, although Aunt Kate apparently garnished it with strawberry topping (frozen strawberries mixed with cornstarch and sugar). I preferred to use fresh berries so I changed that part.

Otherwise, in all its delicious glory, here is the recipe for Aunt Kate's wonderful cheese cake.

AUNT KATE'S CHEESE CAKE

  • 2 teaspoons butter or margarine

  • 1/3 cup graham cracker crumbs

  • 1 pound cream cheese

  • 1 pound cottage or farmer cheese

  • 1 cup sugar

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • Topping

 TOPPING:

  • 2 cups dairy sour cream

  • 3 tablespoons sugar

  • 1 teaspoon vanilla extract

 GARNISH

  • 12-15 strawberries

  • 1/4 cup apricot or currant preserves

 

Preheat the oven to 375 degrees. Spread the butter on the bottom and sides of a 9-inch springform pan. Sprinkle the inside of the pan with the graham cracker crumbs. Shake the pan to coat the bottom and sides of the pan completely. Beat the cream cheese and cottage cheese in an electric mixer at medium speed for 1-2 minutes or until they are thoroughly blended. Add the sugar and blend it in. Add the eggs and vanilla extract and beat the ingredients for 2-3 minutes or until the mixture is smooth, scraping down the sides of the bowl occasionally with a rubber spatula. Pour the batter into the prepared pan. Bake for 20 minutes.

While the cake is baking, make the topping by mixing the sour cream, sugar and vanilla extract together until well blended. When the cake has baked for 20 minutes, remove it from the oven and carefully spoon the topping over the cake. Return the cake to the oven. Bake for 10 minutes. Turn the heat off but leave the cake in the oven until it has cooled to room temperature.

When the cake has reached room temperature, (“place it in the ice box”) refrigerate it at least 4 hours or until it is thoroughly chilled. Wash and trim the berries and cut the in half. Place the halves attractively on top of the cake. Heat the preserves in a small saucepan and brush the melted preserves over the berries. Remove the sides of the pan to serve the cake.

Makes one cake serving 12-16

 

 

 

Rich, Dense, Cream Cheese Pound Cake

I've been experimenting with cream cheese lately, mostly because I had some extra left over from creating and testing recipes for Philadelphia Cream Cheese at JoyOfKosher.com. (You can find the recipes here, where there are recipes also from Tamar Genger and Jamie Geller).

But also because the Jewish holiday of Shavuot is coming and this particular holiday usually involves a lot of cream cheese.

I've made several cheesecakes. You'll read about them here soon.

But I decided to make a pound cake too. With the addition of cream cheese, this plain old cake is outrageously dense, moist and rich.

You don't need to add frosting, powdered sugar, any sort of glaze, accompaniments of any kind like ice cream or fresh fruit. Although, of course, none of those would hurt.

But this one is good just the way it is.

Cream Cheese Pound Cake

  • 1-1/2 cups butter
  • 8 ounces cream cheese
  • 2-1/2 cups sugar
  • 6 large eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons grated lemon peel
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Preheat the oven to 300 degrees. Grease a 10-cup bundt pan. Beat the butter and cream cheese together in the bowl of an electric mixer set at medium for about 2 minutes, or until well blended. Add the sugar gradually and beat for about 2 minutes or until thoroughly incorporated. Add the eggs one at a time, beating after each addition. Scrape down the sides of the bowl occasionally to keep the batter smooth and uniform. Add the vanilla extract and lemon peel and stir them in. Add the flour, baking powder and salt and beat the ingredients for about 1-2 minutes or until smooth, uniform and well-blended. Spoon the batter into the prepared pan. Bake for 1-1/2 hours or until a cake tester inserted into the center comes out clean.

Makes one cake serving 16 people

Cheesecake Cookies

I usually bake the same cookie recipes over and over. Butter cookies. Grand Finale (chocolate chip) cookies. Peanut Butter cookies

But recently I decided to branch out with some Chinese cookies. And a few other recipes I'll post about here soon.

I got my inspiration straight from the "cookies" folder in my file cabinet on one of those days when I decided to do a purge of unnecessary stuff. This particular folder includes recipes clipped from magazines and newspapers. I should have known as I collected them that I would probably never actually make most of them.

But there were a few handwritten recipes that I just couldn't resist. A few from my Mom and my Aunt Beck. A few recipe cards that are sentimental for me because they are from friends and relatives that have passed away.

There was also this recipe for Cheesecake cookies from someone named Rose. I have no idea who she is, or was. My Mom had a friend Rose. Maybe it was hers. I don't recognize the handwriting on the index card. It isn't my Mom's handwriting. Or my Aunt's. 

Unlike most of the hand written recipes from women of my mother's generation, this one was complete with a list of ingredients (though not in the right order) and instructions on how to make the cookies. I've edited the recipe to conform to our more modern style of recipe writing. But below is the recipe for the most fabulous, tender, salty-and-sweet, tangy with cheese, creamy centered but crusty sandwiched cookies you can imagine.

Nice idea for Mother's Day.

Rose's Cheesecake Cookies

  • 1/3 cup butter
  • 1 cup all-purpose flour
  • 1/2 cup chopped nuts
  • 1/3 cup packed brown sugar
  • 8 ounces cream cheese
  • 1/4 cup sugar
  • 1 large egg
  • 1 tablespoon lemon juice
  • 2 tablespoons milk or cream
  • 1 teaspoon vanilla extract

 

Preheat the oven to 350 degrees. Melt the butter and set it aside. In a medium bowl, combine the flour, nuts and brown sugar and mix to distribute the ingredients evenly. Add the melted butter and mix until the mixture is crumbly. Remove one cup of this mixture and set it aside. Place the remaining mixture inside an 8-inch square baking pan. Press the crumbs down firmly to cover the bottom of the pan evenly. Bake for 12-15 minutes or until firm. Remove the pan from the oven and set it aside. Beat the cream cheese and sugar together in the bowl of an electric mixer set at medium speed for 1-2 minutes or until well blended. Add the egg, lemon juice, milk and vanilla and beat the ingredients for another minute or until thoroughly blended. Spoon the cheese mixture evenly over the baked crumbs. Top with the remaining, reserved unbaked crumbs. Bake for about 25 minutes or until golden brown. Remove from the oven and let cool. Cut into small squares (16 pieces).

 

Makes 16 cookies

Mashed Potato, Kale and Feta Cheese Pancakes

See these pancakes? I actually try not to make them too often, because, like the old Lay's ad said: you can't eat just one.

These pancakes are soft and creamy inside, fabulously crispy on the surface and have an earthy, vaguely mineral-y potato flavor plus the tang of cheese. They are among my favorite things to eat ever

Also, they are perfect for Passover because they contain matzo farfel, not bread or bread crumbs. 

They are perfect for Hanukkah when you might want a different kind of latke.

They are perfect for vegetarian meals anytime.

They are perfect as a brunch dish for company because you can make them ahead and reheat (preheat oven to 425 degrees F).

Try one! And maybe freeze the rest to keep yourself from overeating. They store nicely in the freezer (wrapped twice in plastic) for up to two months.

Mashed Potato, Kale and Feta Cheese Pancakes

  • 2 cups matzo farfel
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 2 cups chopped fresh kale
  • 2 cups mashed potatoes
  • 6 ounces crumbled feta cheese
  • 1 large egg
  • salt and freshly ground pepper to taste
  • vegetable oil for frying

Place the matzo farfel in a bowl, cover with very hot water and let soak for a few minutes until soft. Drain the farfel and squeeze out as much water as possible. Return the drained farfel to the bowl. While the matzo farfel is soaking, heat the olive oil and butter in a sauté pan over medium heat. When the butter has melted and looks foamy, add the onion and cook for a minute. Add the kale, cover the pan and continue to cook, stirring occasionally, for 5-6 minutes, or until the kale has wilted. Spoon the mixture into a strainer and squeeze out as much liquid as possible from the vegetables. Add to the matzo farfel and mix ingredient s to distribute them evenly. Add the mashed potatoes, feta cheese and egg and mix ingredients thoroughly. Season to taste with salt and pepper. Heat about 1/2-inch vegetable oil in a large sauté pan over medium-high heat. Shape the potato mixture into patties and fry for 2-3 minutes per side, or until golden brown. Drain on paper towels.  

 Makes about 16-18 pancakes, 6-8 servings

 

Leslie's Matzo Fritters

I know lots of people who groan about Passover food. Honestly, I don't get it. I love matzo. I love matzo balls. I love matzo brei. What's to complain about?

I don't miss bread because we don't eat it very often.

Ditto pasta.

I do miss muffins but can live without them for a week.

The rest of what we eat -- meat, poultry, fish, vegetables -- is more or less what we eat all the time, so there really aren't big changes in our meals during the holiday.

BUT ...

It is nice to find some new eats that are kosher for Passover, just to mix things up a bit. Fortunately, this year my cousin Leslie gave me her recipe for matzo fritters. They are delightfully light and crispy and take just minutes to cook. They are fragrant with cinnamon and taste wonderful all by themselves but are superb with sour cream or plain yogurt.

Perfect for lunch or a light dinner.

Leslie's Matzo Fritters

  • 1/2 cup ground nuts (I used almonds)
  • 1/3 cup matzo meal
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • salt to taste
  • 1/2 cup water
  • 1 large egg
  • 2 tablespoons butter

Mix the nuts, matzo meal, sugar, cinnamon and salt in a bowl. In another bowl, beat the water and egg together. Pour the egg mixture into the bowl with the matzo meal mixture and beat vigorously to blend the ingredients. Melt one tablespoon of the butter in a large saute pan or griddle over medium heat. When the butter has melted and looks foamy, pour enough of the batter into the pan to make 4-5 fritters about 3-inches in diameter, leaving space between each fritter. Cook for about 3 minutes per side or until golden brown and crispy. Repeat with the remaining tablespoon butter and the remaining batter.

Makes 8-10
