I think I could make banana bread in my sleep.

Because I make banana bread so often it's like watching "Dave" for the umpteenth time. I know exactly what's coming next. I know what to expect. I like it.

I always buy bananas and then no one eats them except for maybe on a rare occasion, and then the bananas get brown and then no one eats them ever and I don't want to throw them out.

So, banana bread.

Also, banana bread baking in the oven smells wonderful.

Here's my latest version (I do make a different one each time!). I love how lovely the streusel top looks. Sets it apart from any old banana bread.

Banana Streusel Bread

Streusel:

  • 1/3 cup brown sugar
  • 3 tablespoons all-purpose flour
  • 1/8 teaspoon cinnamon
  • 1 tablespoon butter, margarine or coconut oil

Bread:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 3 medium very ripe bananas
  • 1/4 cup fruit juice such as mango, orange or apple
  • 3/4 teaspoon vanilla extract

Preheat the oven to 350 degrees. Grease a 9”x5”x3” loaf pan.

Make the streusel: mix the brown sugar, flour and cinnamon in a small bowl. Add the butter and work it in with fingers or a knife until mixture is crumbly. Set it aside.

Make the bread: Mix the flour, baking soda, baking powder, cinnamon and salt in a bowl and set it aside. Beat the sugar and vegetable oil with a handheld or electric mixer set at medium speed for 2-3 minutes or until the mixture is light and fluffy. Add the eggs one at a time, beating after each addition. Mash the bananas and add them to the sugar mixture. Beat thoroughly until the ingredients are well blended. Add the flour mixture and beat for 1-2 minutes to blend the ingredients thoroughly. Stir in the juice and vanilla extract. Pour the batter into the prepared pan. Scatter the streusel on top. Bake for 1 hour or until a cake tester inserted into the center comes out clean. Cool the bread in the pan 15 minutes. Remove the bread from the pan and let it cool on a cake rack.

 Makes one bread serving 10-12

 

Some like it hot

Do you think that so many SuperBowl foods are hot and spicy because football weather is often so cold, snowy and blowy? And maybe eating things like Buffalo wings and Chili makes us feel warm and cozy as we watch the men running around outside?

Or maybe it's that spicy food is energizing and that helps make the game more exciting?

Whatever the reason, a lot of people serve at least one spicy item during the event.

Here's mine: a persimmon salsa with serrano peppers and lime juice to add a little kick to your menu. Best with corn chips.

Persimmon Salsa

  • 2 Fuyu persimmons
  • 2 tablespoons chopped fresh mint
  • 2 teaspoons finely chopped serrano or jalapeno pepper
  • 2 medium scallions, chopped
  • 1 large garlic clove, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 2 tablespoons lime juice
  • salt to taste

Chop the persimmons into small pieces and place them in a bowl. Add the mint, serrano pepper, scallions and garlic clove. Pour in the olive oil and toss the ingredients. Add the honey and lime juice, sprinkle with salt and toss the ingredients. Let rest for at least 30 minutes before serving.

Makes about 2-1/2 cups

Although I love a good, crunchy-crusted hunk of bread and could happily spend my life feasting on pasta, I don’t eat much of either, because going nearly carb-free is the only way I’ve found to keep my weight down to a reasonable number. 

So not-eating bread and pasta during Passover is not a big deal for me.

What I miss most during the holiday is popcorn, which at all other times throughout the year I make or buy (plain) and nibble on in the belief that it is a healthier snack snack than most. Popcorn is also filling and besides I absolutely LOVE how it tastes and feels in my mouth. 

Unfortunately when it comes to popcorn, I am like a chicken. Just keep putting more in front of me and I will keep pecking at it. I keep a bagful in my car trunk so it isn’t as easy to grab as, say, anything in my kitchen cabinets.

I always resume my popcorn habits after passover. And, for good measure, on a home night-at-the-movies, I sometimes indulge in the glorified caramel corn in the photo, because, hey, I haven’t had popcorn in a while and besides, I am generally carb-free.

That makes it okay, don’t you think?                                                                                       

Caramel Corn

2 tablespoons vegetable oil

1/2 cup popping corn

1 cup brown sugar

1/4 cup honey

12 tablespoons butter

3/4 teaspoon salt

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1 cup chopped nuts or raisins or chopped dried fruit (r a mixture of these)

Preheat the oven to 250 degrees. Place the vegetable oil in a large pot over medium heat. Add the corn kernels, cover the pan and pop the corn. When the kernels have all popped, place the popped corn in a large bowl. Place the brown sugar, honey, butter and salt in a saucepan over medium-high heat. Stir to combine all the ingredients and bring to a boil. Cook for 3-4 minutes, stirring frequently, until the sugar has dissolved and the liquid has thickened. Remove the pan from the heat and stir in the vanilla extract and baking soda. Pour over the popped corn. Add the nuts and/or fruit if desired. Mix the ingredients to coat the kernels completely. Place the popcorn on a baking sheet. Bake for 35-40 minutes, stirring the ingredients a few times. Remove from the oven and let cool.

Makes about 10 cups

As soon as I see that pumpkins have replaced the corn and tomatoes at the market I start hungering for food that’s autumn-like. Mostly pumpkin bread and muffins to snack on when I need a little something in the late afternoon with my last cup of coffee for the day. 

I don’t make pumpkin muffins as often as I do banana bread, but almost. This is my latest version, which has kefir because I happened to have some in the fridge. But buttermilk is fine too. 

Reheat leftovers in a toaster oven for a few minutes if you need a quick breakfast. 

Btw, I used to bake and mash the pumpkin insides to get the puree, but most of the time I use canned pumpkin or squash. NOT pumpkin pie mix. I want to mix in the spices of my choice, not theirs.

Pumpkin Muffins with Kefir and Pumpkin Seeds

  • 3  tablespoons butter

  • 1-3/4 cups flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 teaspoon cinnamon

  • 1 teaspoon freshly grated nutmeg

  • 1/8 teaspoon ground cloves

  • 2 tablespoons brown sugar

  • 1 cup mashed pumpkin (not pumpkin pie mix)

  • 3/4 cup kefir

  • 1/4 cup molasses

  • 1 large egg

  • 2-3 tablespoons crushed pumpkin seeds 

Preheat the oven to 400 degrees. Lightly grease 9 muffin tin cups. Melt the butter and set it aside to cool. Sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves and brown sugar. In a separate bowl, combine the pumpkin, kefir, molasses, egg and cooled, melted butter. Add the liquid ingredients to the dry ones and mix only long enough to combine. Spoon the batter into the prepared muffin tin cups. Scatter the pumpkin seeds evenly on top of each muffin. Bake for 22-25 minutes or until a cake tester inserted into the center comes out clean.

Cashew Sesame Seed Candy Bars

Candy for Chinese New Year?

When I think about Chinese food it’s usually Egg Rolls or Sichuan Beef with Orange Flavor or Kung Pao Gai Ding.

Not candy.

In fact, I don’t associate Chinese cuisine with anything sweet or dessert-like. Years ago I took Chinese cooking lessons at the China Institute and my teacher, the great Florence Lin, said that Chinese recipes often have a little sugar in them and so, one’s “sweet tooth” is satisfied by the end of a meal, with no need for any special dessert.

And yet — one of the recipes I learned was one for the kind of Sesame Seed-Nut Brittle I remember my parents buying whenever we visited New York’s Chinatown. It is sweet! And salty too, a nice balance. It’s also crunchy and gets into every tooth. 

It’s also easy to make and lasts a while.

Cashew Sesame Seed Candy Bars

  • 1/2 cup sesame seeds

  • 1-1/2 cups cashews, broken up

  • 2 cups sugar

  • 5 tablespoons white vinegar

  • 1-1/2 tablespoons water

Preheat the oven to 350 degrees. Bake the sesame seeds in a single layer in a jelly roll pan for about 10 minutes or until lightly toasted (shake the pan once or twice during the baking time). Lightly oil an 8-inch or 9-inch square cake pan. Place half the sesame seeds and all of the cashews in the prepared pan and set aside. Place the sugar, vinegar and water in a saucepan and bring to a boil over medium-high heat. Stir only until the ingredients are well mixed. Continue to cook until the mixture is turning golden and reaches the “hard crack” stage (a drop of the mixture in cold water will be hard and brittle), about 295 degrees on a candy thermometer. Pour the hot syrup over the seeds and nuts. Sprinkle with the remaining sesame seeds. Let cool for a few minutes, until the ingredients are “set.” Cut into bars with a knife. Let cool and harden completely. Recut where the initial cuts have been placed.

Makes 16 pieces

I come from a talkative and political family, a family who discussed lots of different stuff at the table over dinner. I was the youngest child, but was still included, encouraged to have my say.

I remember that we yakked about all sorts of things from what happened at school to when we were going shopping for new socks to why we had to take polio vaccinations to whether the government should put fluoride in the drinking water.

On the drive back from college one year my parents, brother and I discussed the merits of Medicare.

On that same trip — during the 1960s — we drove through Tennessee to visit my father’s sister and we were all aghast at the signs in the restaurants saying “we reserve the right to refuse service to anyone.” We knew what that meant and found it horrifying.

It prompted a family discussion about civil rights.

We were a lively bunch and, thinking back, a thinking bunch too. We actually cared about issues and people and what kind of country we were living in.

My parents and brothers always talked about the importance of voting. Not just because we were people who were passionate about issues, but because it is so important to exercise a right that so many people don’t have. And to voice your opinion.

Every vote counts. My one vote among the millions makes a difference. To the total tally and also to me, because if my candidates win I can feel proud to be part of the victory. And if they lose, well, it won’t be because of me.

Please vote everyone. You are too important not to.

I will be hosting an election night get-together, something I do every four years. My guests are friends and family who feel the commitment to vote as strongly as I do (including one of my brothers).

We’ll be having sandwiches (smoked fish, cream cheese, bagels) for dinner so we can eat in the family room and watch TV for hours.

But we’ll start with a few hors d’oeuvre. Including hummus.

I like zatar, the Middle Eastern spice blend, so I’ll make this easy hummus recipe and sprinkle the seasoning on top.

There will be popcorn for sure and leftover Halloween candy.

Plus a pie.

It’s always a comfort to share this evening with other people. I recommend it highly.

HUMMUS WITH ZATAR

 

1/3 cup pine nuts

1 15-ounce can chickpeas

1/4 cup fresh lemon juice

1/4 cup tahini

1-1/2 tablespoons olive oil

1 clove garlic

1/2 teaspoon salt

1/4 teaspoon ground cumin

2 tablespoons chopped fresh parsley

zatar

pita chips

 

Toast the pine nuts until lightly browned. Set aside. Drain the chickpeas but reserve the liquid. Place the chickpeas, lemon juice, tahini, olive oil, garlic, salt, cumin, parsley and pine nuts in a food processor. Add 4 tablespoons to 2/3 cup reserved bean liquid, depending on desired texture (start with the minimum). Process until blended to the desired texture. Place the hummus in a serving dish. Sprinkle with zatar. Serve with cut up pita wedges or pita chips.

Makes 1-1/2 cups

That’s what everyone told me Wednesday night at our Break-the-fast. They said it was the best hummus they ever tasted. Also the best texture; smooth but with some graininess; moist but not pasty.

Maybe they were all just hungry? And hummus is the first nibble of food they consumed in 24 hours, the initial tidbit to prepare the stomach before eating dinner?

But I kept it out even during dinner and by the end of the night it was gone, gone gone. Several people took a bit more to eat with the Mujadarah, Spinach Pie, Kugel, chopped salad and egg salad.

So, here’s the recipe. Try it yourself and let me know what you think. 

Btw, hummus stuffed cherry tomatoes is a good treat for Sukkot. 

 

HUMMUS WITH ZATAR

  • 15 ounce can chickpeas

  • 2 large cloves garlic

  • 1/4 cup tahini

  • 1/4 cup lemon juice

  • 2 tablespoons olive oil

  • 2 tablespoons chopped fresh parsley

  • 1 teaspoon paprika

  • 1/2 teaspoon salt

  • 1/2 teaspoon zatar

Drain the chickpeas but reserve the liquid. Place the chickpeas in a food processor. Cut the garlic into smaller chunks and add to the food processor. Add the tahini, lemon juice,   olive oil, parsley, paprika, salt and zatar. Process to combine ingredients into a rough puree. Continue to process while adding some of the reserved liquid though the feed tube until the mixture reaches the desired consistency (approximately 3-6 tablespoons).

Makes about 1-1/2 cups

Are granola bars healthy?

When they first became popular, back in the 1980s when my kids were little kids, I thought so. And in my efforts to be a “good mother” who tried to give my children healthy food, I bought what was available then. Granola bars were frequent snacks in the house and for school.

I later learned that many of those so-called healthy snacks weren’t.

Just because something is called granola doesn’t mean it’s healthy.

Like if the bars are loaded with trans fats, hydrogenated vegetable oil, high fructose corn syrup, marshmallows, chocolate, artificial color and so on. 

Here’s a recipe for Honey-Oat Granola Bars. Yes, they have chocolate. And honey is a sweetener. And there’s a little brown sugar in there. Still, there’s oats and dried fruit and nuts. You can add some sunflower seeds if you wish.

And they taste good. These are rich, so you just eat a little and feel snack-full.

Honey-Oat Granola Bars

  • 2 cups quick cooking oats

  • 6 tablespoons vegetable oil 

  • 3/4 cup honey

  • 1/4 cup dark brown sugar

  • 1/2 cup chopped almonds

  • 1/2 cup chocolate chips

  • 1 cup dried cranberries

  • 1 teaspoon cinnamon 

  • 1/2 teaspoon salt

Preheat oven to 350 degrees. Line a 9-inch-square baking pan with parchment paper, letting a few inches hang over the side of pan (to help you lift the bars out of the pan). Brush the paper with vegetable oil. Place the oats on a cookie sheet and bake for 5-6 minutes, mixing them once during the baking process, to toast them slightly. Mix the vegetable oil, honey and brown sugar in a saucepan and cook over medium heat for 1-2 minutes or until blended, smooth and hot. Combine the toasted oats, almonds, chocolate chips, cranberries, cinnamon and salt in a bowl. Pour in the honey mixture and stir until well blended. Spoon the mixture into the prepared pan. Bake for 25-30 minutes or until toasty brown. Let cool in the pan. Lift the square out of pan using the overhanging paper. Cut into squares or rectangles.

Makes about 2 dozen

Eggless Lemon Blueberry Bread

Even the most experienced home cooks make mistakes.

Like the one I made yesterday. I decided to bake a Lemon-Blueberry Tea Bread and as soon as I put the pan in the oven I realized I had left the eggs out of the batter.

Wow! That’s a biggie.

I did that once before, many years ago and made the big mistake of retrieving the loaf pan, scooping the batter back into a bowl, mixing in the eggs and then baking the bread as if nothing had happened.

Unfortunately, after the bread baked and cooled down, biting into a slice was like chewing day-old used bubble gum.

This time I just let the bread bake with a “let’s see what happens” kind of attitude.

The results were astonishingly surprising. What a boon for people who can’t eat eggs! This Lemon-Blueberry Tea Bread is delicious. Firmer, denser than one made with eggs, but tasty and tender without them.

So, here’s the recipe, including the eggs, but for egg-free diets — just leave the eggs out.

Lemon-Blueberry Tea Bread

  • 4 tablespoons butter

  • 3/4 cup sugar

  • 2 large eggs (optional)

  • 2 cups all-purpose flour

  • 2-1/2 teaspoons baking powder

  • 3/4 teaspoon salt

  • 1 tablespoon finely grated fresh lemon zest

  • 1 cup milk

  • 1 cup blueberries

  • 1/4 cup fresh lemon juice

  • 1-1/2 tablespoons sugar

Preheat the oven to 350 degrees. Grease a 9”x5”x3” loaf pan. In the bowl of an electric mixer, beat the butter and 3/4 cup sugar at medium speed for 1-2 minutes or until well combined. (Add the eggs and beat them in). Mix the flour, baking powder, salt and lemon zest in a small bowl. Add the dry ingredients to the creamed mixture in thirds, alternating with the milk. Beat to blend the ingredients to a smooth, even batter. Fold in the berries. Spoon the batter into the prepared pan. Bake for about 55 minutes or until a cake tester inserted into the center comes out clean. While the bread is baking, combine the lemon juice and 1-1/2 tablespoons sugar in a small saucepan and cook over medium heat for 1-2 minutes or until the sugar has dissolved. When the bread comes out of the oven, pour the lemon juice mixture on top. Cool the bread in the pan for 10 minutes. Invert onto a cake rack to cool completely.

Makes one bread

Egyptian Hummus with Tahini

What’s the most popular hors d’oeuvre?

I think it has to be hummus. I don’t have any scientific proof but I once counted the kinds of hummus sold at one of my local supermarkets and stopped when I reached 38.

Thirty-eight kinds of hummus? That’s almost as many varieties as potato chips!

Of course there aren’t actually 38 different flavors. There are several brands and some of them are the same flavor, brand to brand — like garlic flavored or spicy, olive, tahini.

But there are also some that I will call post-modern versions because I can’t think of another word for it. Like Sabra’s chipotle or Buffalo style hummus or Tribe’s hummus topped with Cilantro Chimichurri. Wow, that’s what I call fusion cuisine!

Sorry, but when it comes to certain foods, I am a purist. Like with hummus.

In Egypt, hummus is still blessedly kind of pure and simple, so I’ve been eating it every day with breakfast and dinner. It’s basic stuff: pureed chickpeas mixed with spices, olive oil and lots of tahini. Mix it all up in a food processor, garnish with a drizzle of olive oil and a few cooked chickpeas and it’s yummy enough. You don’t need to make it more complex or add any sauce or topping. That way you can actually taste the hummus.

Try this version — it’s easy to make, cheaper than store-bought and you won’t have to make a decision about which of the 38 (or more) flavors to buy.

Egyptian Hummus with Tahini

  • 1 pound can chickpeas
  • 1/3 cup tahini
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 clove garlic
  • 1/2 teaspoon salt or to taste
  • pita bread

Drain the chickpeas but reserve the liquid. Set aside a tablespoon of chickpeas. Place the remaining chickpeas in a food processor with the tahini, 2 tablespoons olive oil, lime juice, garlic, salt and 1/4 cup of the reserved bean liquid. Process until the ingredients form a smooth puree (turn the machine off and scrape the sides of the work bowl once or twice). If you prefer a thinner hummus, add some more of the bean liquid. Spoon the hummus into a serving bowl. Garnish with the remaining tablespoon olive oil and the reserved chick peas.

Makes about 1-1/2 cups
