When my cousins come for a few days to celebrate New Years with us I always have an apple ready for dessert on one of the nights. It’s tradition! And then, of course, there must be something else right? That changes every year. This year I made these dark, fudgy, moist, chocolate brownies!
Chocolate Brownies
4 ounces unsweetened chocolate
6 tablespoons unsalted butter or margarine
2 large eggs
1 cup sugar
3/4 cup all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 cup chocolate chips, optional
Preheat the oven to 350°F. Lightly grease an 8-inch square baking pan. Put the chocolate and butter in the top part of a double boiler set over barely simmering water. Cook for 3–4 minutes or until the ingredients have melted. Remove the top part of the double boiler from the heat. Combine the eggs and sugar in a large bowl and beat with an electric mixer set at medium speed for 2–3 minutes or until the mixture has thickened. Add the flour, baking powder, salt, vanilla extract and chocolate chips and stir them in. Add the chocolate and butter mixture and stir to blend all the ingredients thoroughly. Pour the batter into the prepared pan. Bake for 28–30 minutes or until a cake tester inserted into the center comes out with a few crumbs clinging. Cool the brownies in the pan.
